Main ingredients

The traditional recipe for the production of squash caviar provides in its composition the actual squash, carrots, onions, butter, seasonings and tomato paste. Many home-food lovers do not always favor tomato paste from the store and prefer to add fresh tomatoes to their caviar, especially if they were grown in their garden. In the recipe below, in order to give the caviar a delicious taste, sweet pepper is introduced into the composition of products, except for tomatoes.

So, for cooking squash caviar you will need:

  • Squashes - 2 kg;
  • Carrots - 400 g;
  • Onion - 300 g;
  • Bulgarian pepper - 500 g;
  • Tomatoes - 1 kg;
  • Vegetable oil - 100 g;
  • Garlic - to taste (from one lobule to one head);
  • Salt - 10 g;
  • Sugar - 15 g;
  • Seasonings and herbs to taste - allspice and black pepper, coriander, parsley, dill, celery.

This amount of products in the end should be enough just for a standard 5-liter bowl of the Redmond multicooker.

Cooking procedure

Vegetables before cooking should be carefully washed and cleaned of excess: zucchini, carrots, tomatoes, onion and garlic peels, pepper - from tails and seed chambers. Following the recipe, the method of chopping vegetables is not of fundamental importance; rather, the sequence of their laying in the multicooker bowl is more important.

Tip! To make it easier to rid the tomatoes from the skin, they can be pre-scalded with boiling water.

First, oil is poured into the bowl of the multicooker, and crushed onions and carrots are laid out there as well. The baking mode is set for 10 minutes.

After the end of the program, according to the recipe, finely chopped sweet pepper is added to the bowl, as well as salt and sugar, and in the same mode, the slow cooker works for another 10 minutes.

In the next step, all the vegetables must be transferred to a separate dish, where they are chopped using an immersion blender, mixer or food processor.

At this time, the slow cooker contains finely chopped tomatoes, zucchini, and garlic. Everything is well mixed. Put the mode "quenching" for 40 minutes. The cover of the multicooker can not be closed, so that excess liquid has the ability to evaporate. After 40 minutes, you can add all the seasoned recipes that you put on the recipe and the slow cooker is switched on as before for another 10 minutes.

At this stage, the contents of the multicooker are ground in a separate container and all components of the squash caviar are mixed together again in the bowl of the multicooker. For another 10 minutes, the “quenching” mode is activated and the caviar from squash is ready.

Important! Do not chop the vegetables in the crock-pot itself - you can damage its non-stick coating.
