Making canned food from a variety of fruits and vegetables for the winter on their own is becoming increasingly popular. And the reason is not only that you get the opportunity to produce dishes using proven and very tasty recipes, but also that you can be sure about the safety of its ingredients, especially if they have been carefully grown with your own hands.
But as for an experienced housewife, and for the beginner, the process of sterilizing jars or ready-made dishes, which is sometimes necessary when canning, appears to be a nightmare. Just imagine that in the heat you will have to fill the kitchen with hot water vapor - and you no longer want to do anything. But, fortunately, in recent years there have been many adaptations to facilitate cooking. And one of them seemed purposely invented in order to make the sterilization process easy and enjoyable. But, indeed, the sterilization of cans in aerogrill is so simple and not burdensome that when you see or try to carry out this process once, you are unlikely to use any other method of sterilization in the future.
What is convection oven
The real name of this device is a convection oven and it was invented not at all for sterilization, but for preparing various dishes using hot air streams. But this kitchen appliance turned out to be very versatile in its intended use, since both baked fish and chicken or a kebab with a crispy crust are elegantly obtained in it. And in it you can cook soups and compotes, stew, bake, as well as make a variety of preparations for the winter. Exactly on the last of its functions it is necessary to dwell in more detail.
After all, convection oven makes it possible not only to sterilize empty cans for canning, which in itself is not bad, but also to make blanks directly in banks, at the same time subjecting products to sterilization. The quality of sterilization is even higher than when using conventional methods. This is achieved by increasing the temperature of heating: it can vary from 150 ° C to 260 ° C. This article is devoted to how to sterilize cans and various ready-made dishes in a convection oven.
Sterilization of empty cans
If you have recently purchased a convection oven and are still not morally ready to completely trust him in preparing the blanks for the winter, then you can start with the simplest process - sterilization of empty cans for further canning.
This process with the help of aerogrill occurs very quickly and naturally. First, as usual, banks are prepared: they take away the intact ones, wash them and rinse them well.
The lowest grille is put into the bowl of the convection oven, and as many cans are placed on it as can enter so that a small space remains between them.Attention! To sterilize large and tall cans, you may need to install a magnifying ring on top so that you can close the lid.
The temperature on the convection oven is set from + 120 ° С to + 180 ° С. In the conveying Hotter, where you can also set the fan rotation speed, it is set to medium. For cans with a volume of not more than 0.75 l, the timer is set to 8-10 minutes. Banks of greater volume are sterilized already 15 minutes. However, the sterilization time is directly dependent on temperature. If you need to carry out the process quickly, then set the temperature from + 200 ° С to + 240 ° С and sterilize any cans in no more than 10 minutes. However, in this case, it is desirable that high-temperature sterilization be combined with steam sterilization. To do this, before installing the cans in the air conveying oven, pour a little water into each of them (a layer of about 1-2 cm).
After the timer signal sounds, you can take the sterile jars out of the bowl and use them for their intended purpose. You only need to do everything with great care, because the banks will be very hot.Tip! If you do not increase the set temperature above + 150 ° C, then you can easily sterilize the lids together with the cans.
But at a higher temperature gum-seals in the covers can deteriorate. In this case, they can either be removed and sterilized separately, or the covers themselves should be sterilized separately in any convenient way.
Blanks in convection oven
So, you now know how to sterilize cans in aerogrill. But the most interesting feature of this device is the sterilization of ready-made blanks. This process does not like any housewife, because it is quite time-consuming and even dangerous because it is associated with the manipulation of glass jars filled with hot liquid in boiling water. Interestingly, the convection oven is able to create a miracle. It can make the process of sterilizing the workpieces in it completely safe and easy even for novice chefs.
If you want to sterilize ready-made dishes, then you simply place the cans with them in the convection oven bowl, cover with rubber-free lids and turn on the timer for the required time at the right temperature.Important! If from the very beginning to set the highest temperature, + 260 ° C, then due to the intensity of the heating, the sterilization time is reduced.
But most often, in order to save electricity, proceed as follows. The convection oven is switched on initially at the highest temperature, and after 10 minutes it is reduced to + 120 ° С + 150 ° С. In general, sterilization time in this case takes 15-20 minutes, even for large cans.
Sterilizing the workpiece, you can observe through the transparent glass the course of the process itself. If everything goes right, you should notice boiling bubbles in the jars.
After the instrument’s beep sounds, the cans are carefully removed and then spun with sterile caps.
But the most interesting thing is that in aerogrill it is possible to make blanks with sterilization practically from scratch, that is, without using additional bowls, pans and other kitchen utensils and heating elements in the form of a stove or oven.
To do this, put sliced products (vegetables, fruits or berries) into cooked jars and place them in the convection oven bowl. Then the banks are filled with the necessary liquid (marinade, brine or sweet syrup) and cover with lids.Comment! If you sterilize blanks with covers, then in any case it is better to remove the sealing gum to be able to set the highest temperature.
Next, set the required temperature and cooking time. It is only necessary to keep in mind that if you use recipes for an ordinary plate, then for aerogrill cooking time can be reduced by 30%.
After the end of work of the convection oven, your blanks are ready and sterilized; all that remains is to take them out and roll them up. It is only important not to forget to insert into the covers, sterilized elsewhere sealing gum.
As you can see, there is nothing difficult in working with aerogril, but this device can facilitate the process of sterilizing preparations for the winter several times.
